Aloo Begun Borir jhol - a mild gravy with potato,eggplant and bengali sundried dumplings

While I was a kid, I loved this dish and my mom used to make it very frequently. This is really a very good dish in the summer as it is very light and easy to digest.
It is very hot in Mangalore right now an after coming back from office, I feel very confused what to cook for dinner. Due to this heat hubby and me both does not  like anything spicy so I went for this one. Besides it will not take much time to prepare the dish and it will taste super.

You can customize the dish also adding other veggies like parwal, cauliflower or can make only with potatoes. Addition of boris make it taste awesome. However you can omit it if you don't like.

Recipe: Aloo Begun Bori Jhol
Cooking Time: 1 hr

Ingredients:

Potatoes :2-4
Begun(Eggplant): 1 medium sized
Boris:15 pieces (depends on you)
Tomato: 1 medium chopped
Cumin seeds: 1 teaspoon
Green chilies :2 to 3 (as per your choice of spiciness)

Turmeric Powder:: 1 tea spoon
Kashmiri Red chilli Powder: 1 tea spoon
Jeera Powder : 1 tea spoon
Coriander Powder :1 tea spoon
Oil - 2-3 Tblspn
Salt: To taste
Sugar: To taste

Method:
  1.  Prepare the vegetable
  2.  Heat oil in wok/Kadai and fry the Boris till they turn brownish. Please do not over fry them as  they will become bitter in taste. Take in out from the kadai and keep aside.
  3.  Now again some oil and put the cumin seeds and wait till they splutter and fragrant.
  4.  Now put the potato pieces adding salt and fry till the edges become little brown.
  5.  Next add the eggplant pieces and fry them. You can add little salt to it.
  6.  Once both potatoes and eggplant are fried now put the tomatoes and green chillies. Wait till the  tomatoes become little mushy and loose its raw smell.
  7.  Now add all the masala like turmeric, cumin, Kashmiri red chilli and coriander. You may add  red chilli if you want it to be spicy. Mix them well and cook for a while.
  8. One it is cooked after oil starts floating put water as per the amount of gravy you want. It may vary from 1 cup to several cups as per your choice.and mix well.
  9. Add Salt and sugar and simmer the gas and cook for a while covering the lid.
  10. Open the lid to see whether it is boiling or not. If boiling put the fried boris into it. Also check the water level. If it has dried up add more water to make it runny.
  11. Check whether the potatoes are cooked well and the boris have increased in the size.
  12. Put of from flame and serve with hot steamed rice.

Very practical recipe for geriatric male cooks like me.And tastes just as good in chilly BLR.However, a little advise on the final cut-size of the veggies would help.My wife told me the 'begun' had vanished into the gravy.Great taste otherwise.
