Mango Pudding - A Summer Delight

This week was very hectic for me. I was loaded with huge amount of work at office and really didn't find time to sit for writing. On top of that my health was bothering me a lot. I had to take a day off from office as I had a very bad cold followed by a bad stomach. After a long time I was not having the energy to do any house work and was lying down most of the time. But you know, when you are lucky to have the most caring person around you, you really don't have to bother much. My husband is really a wonderful person in managing anything. So as I was down with fever and cold, he was cooking the food, caring about me and also working hard in the office.



Few days back I was googling around and found this quick,hassle free "Mango Pudding" recipe and decided to try it. I like mangoes a lot, and specially as it is the season of the varieties of mangoes, this recipe is a must. So on previous Sunday, we went to the city mall here and purchased few mangoes for the recipe. As it is a pudding, I thought of setting it in a mould to give it a shape. While searching, I got this beautiful flower shaped moulds in the mall and quickly bought those.



Though I was not well, but still acquire the energy for this recipe. So on Monday night just after hubby prepared the dinner I took the charge of proceeding with the recipe of "Mango pudding". As the recipe demands the use of Agar Agar or China grass, I told hubby to brought from the local shopping mart.

Hero goes the recipe for the Mango Pudding. Take a look and do try it.

Recipe: Mango Pudding
cooking time :1hr

Ingredients:

Ripe Mangoes: 2-3
Agar Agar or China Grass - 10gm
Sugar: 1/2 Cup or as per your preferable sweetness.
Water - As per need

Method:

  1. Wash the Mangoes and scoop out the pulp from it.
  2. Put the mango pulp in the mixer and blend it till smooth puree.
  3. Wash Agar Agar thoroughly with water and soak it for 10 mins.
  4. Once it is soaked put it on stove and boil it till it dissolves in water.
  5. Once dissolved put off the gas and keep aside.
  6. Add sugar to the mango puree and put it in gas and mix well until the sugar dissolves completely. Put off the gas and keep aside.
  7.  Now add the Agar Agar mix to the mango puree and mix well.
  8. Check the sweetness and add if required.
  9. Now arrange the moulds and pour the mix into them.
  10. Wait till it comes to the room temperature. Freeze it in the refrigerator for 3-4 hours.
  11. Once it freeze and set, take them out of the moulds and serve.
I hope you will try this recipe and enjoy it. You can also improvise it with adding cream frosting or brush it with condensed milk before having it.



It is really a delight in this hot summer.
